Sauternes or Barsac, Bordeaux, France — botrytis honey and apricot, searing acidity. The fat of the pâté is cut by the acidity of Sauternes in the same way it works for foie gras — the sweetness mirrors the Madeira or brandy depth, and the botrytis complexity engages the iron note in the liver at a level a dry wine cannot reach. Monbazillac from Bergerac offers the same logic at a more accessible price point. Note: sweet wine before a structured red main will raise the palate's sweetness threshold — the dry sparkling option below is the safer sequence if a full-bodied red follows.

Pairs Well

Crémant de Bourgogne, Burgundy, France — lean, mineral, bone-dry, fine bubbles. Where a dry wine is preferred or a structured red main follows, the bubbles cut the butter fat immediately and the mineral character engages the liver without adding residual sugar that would compromise the sequence.

Gewurztraminer demi-sec, Alsace, France — rose, lychee, warm spice, slight sweetness. The aromatic lift mirrors the thyme and the sweetness engages the brandy depth without the full botrytis weight of Sauternes — a mid-point between the dry and fully sweet options.

Avoid

Tannic reds — the butter fat in smooth pâté and tannin produce a coating, astringent sensation that overwhelms the delicacy of the preparation. Lean bone-dry whites disappear against the richness.
