Tostadas

Crisp-fried flat corn tortillas topped with refried beans, shredded chicken or beef tinga (chicken or beef in chipotle-tomato sauce), lettuce, crema, queso fresco, sliced radish, and salsa. Eaten as an open-faced single-bite or knife-and-fork composition. The signature is the textural contrast of the crisp tortilla base against the soft toppings, with chipotle's smoky chilli depth as the analytical centre when tinga is used.
