Paysanne

We assessed Paysanne in July 2026 from the menu and wine list as they stood then. Dishes and bottles move on; how to drink well here changes far more slowly. Paysanne is a classic French bistro on the Conwy estuary whose wine list is, fittingly, almost entirely French: a coherent region-by-region cellar with real quality at the top and a genuine seam of local North Wales wine. The programme earns its standing on that coherence, its honest pricing and a proper sweet-wine tail, held back mainly by a thin by-the-glass offer that asks the diner to choose a bottle rather than match plate by plate. It will most reward the table that comes to eat French, picks one good bottle, and lets the well-chosen list do the rest.
