Purchases is a long-running Modern British fine-dining restaurant and cocktail bar in the middle of Chichester, cooking a seasonal, largely local menu. Its wine programme earns its keep through an unusually flexible by-the-glass range in three pour sizes, a genuine strength in West Sussex sparkling, and a list that climbs sensibly from everyday drinking to fine-and-rare without losing its footing.
