The Courtyard at the Seagoe Hotel is a confident modern-Irish dining room built on strong local sourcing and a Mibrasa live-fire grill. Its wine list is a well-structured, genuinely helpful hotel selection that steps from honest house pours to real premium bottles and communicates unusually well through its group descriptors and pairing icons, held back only by a modest by-the-glass range, no vintages and no sweet-wine finish. It will suit the hotel diner who wants a clear, well-signposted list and a good glass with a steak more than the collector after depth or a cellar to explore.
