Washingborough Hall is a Georgian country-house hotel dining room near Lincoln, cooking seasonal modern British food built on Lincolnshire produce. The wine programme earns its place on a well-organised, France- and Italy-led list with a helpful by-the-glass shortlist and a tasting note under nearly every bottle, sound enough to answer the menu's oily-fish challenges even though it is assembled for easy ordering rather than built to the kitchen. It will most reward the hotel guest who wants a considered glass or an accessible bottle without studying a list, more than the collector chasing something rare.
