Beef in black bean sauce
Fermented black beans and soy make the sauce deeply salty and savoury, with garlic, ginger, green pepper and a little sugar. That savouriness makes firm tannin taste harsh and bitter, so the red wanted here is soft, fruity and fresh, ripe enough for the touch of sweetness.
