Beef short rib ragù with rigatoni
A tomato sauce this long cooked is still sharp, so the wine needs good acidity or it will taste flat. Short rib is rich and gelatinous, which lets a red with firm tannin show at its best, and grated Parmesan adds salt that softens that grip further.
