Braised beef cheeks in Chianti with French onion jus
Slow cooked cheek is soft and gelatinous, which lets a red with real tannin and depth show at its best. The onion jus is dark and sweet from long caramelising, so the wine needs ripe fruit and a little oak spice to meet it, while a lean, sharp wine would taste sour beside it.
