Bread and butter pudding
Bread and butter pudding is soft, buttery custard baked with bread, dried fruit and nutmeg, sometimes glazed with apricot jam. The wine must be at least as sweet as the custard and needs firm acid to lift the butter and egg. Notes of honey, apricot and orange peel suit it best.
