Breaded camembert with fig and balsamic chutney
Hot breadcrumbs and molten cheese need acidity, ideally with bubbles, to clear the richness from the mouth. The chutney is sweet and sharp at once, and a touch of sweetness or plenty of ripe fruit in the wine helps. Young, firmly tannic reds react badly with soft cheese, leaving a metallic taste.
