Carrot cake

Carrot cake is sweet, spiced with cinnamon, ginger and nutmeg, and topped with tangy cream cheese frosting. The wine must be at least as sweet as the frosting, or it tastes thin and sour. It also needs acid to cut the frosting and flavours of spice, raisin or nut to meet the sponge.
