Chicken jalfrezi with pilau rice

Jalfrezi is built on green chilli, green pepper, onion and tomato, so it is fresh and sharp rather than creamy, with real heat. The wine needs high acidity for the tomato, modest alcohol for the chilli and, ideally, green notes of its own.
