Vidiano from Crete, Greece. Apricot and almond with a gentle herbal finish and enough texture for mayonnaise and chicken.

Avoid

Heavy, tannic reds and heavily oaked whites. Tannin clashes with tomato and mayonnaise, and oak weighs down the sandwich.
