Crisp chicken in a sticky gochujang sauce is sweet, salty and hot. It calls for modest alcohol and a touch of sweetness, because alcohol fans chilli heat and a very dry wine can taste thin against a sweet glaze. The fermented chilli paste also makes oak and tannin taste harsh.
