Korean fried cauliflower
Crisp battered cauliflower in a sticky gochujang glaze is sweet, salty and hot, with the deep savoury taste of fermented chilli paste. A touch of sweetness helps meet the glaze and calm the heat, and acid or bubbles deal with the batter. High alcohol, oak and tannin all make the chilli and the ferment taste harsh.
