Korean short ribs with gochujang
Gochujang is sweet, salty, fermented and hot, so the wine needs modest alcohol, and a touch of sweetness helps. Rich, caramelised rib meat wants red fruit or bright acidity, but firm tannin turns hard against the fermented paste.
