A glaze of redcurrant and honey is both sweet and tart, and a wine without ripe red fruit and fresh acidity of its own will taste lean against it. Fatty roast shoulder wants some tannin to cut it, and rosemary rewards a red with a herbal edge, while green, leafy notes jar with the sweetness.
