Rogan josh is an aromatic Kashmiri lamb curry, deep with fennel, cardamom and clove and only moderately hot, so a fruit-forward, gently spiced red can meet the lamb while soft tannin keeps the spice in check. Reach for ripe fruit and warmth, not power. Avoid high-tannin, oaky reds.

Pairs Perfectly

A Grenache from the Côtes du Rhône, France. Ripe red fruit and warm pepper-and-herb spice fold into the aromatic lamb, with soft tannin that leaves the heat alone.

Pairs Well

An off-dry Riesling, Mosel Spätlese, Germany. For those who feel the chilli, its cooling sweetness and bright acid soothe and refresh.

A Garnacha, Spain. The same ripe, peppery warmth as the lead, soft and inexpensive.
