Sausage and mash with onion gravy
Pork sausages bring fat and salt, and slow cooked onions give the gravy a deep, sweet savour. The wine needs bright acidity for the fat and ripe fruit to meet that sweetness, with body and tannin kept moderate so the wine does not swamp the mash.
