Slow cooked beef brisket with a maple glaze
Long cooking leaves brisket rich and tender, and the maple glaze adds caramel sweetness and a sticky, browned crust. The wine needs ripe, generous fruit or it will taste thin and sour beside the glaze, with enough tannin to cut the fat and a little oak to echo the caramel.
